Today I'm sharing with you my favourite healthy vegan pancake recipe!
What do you need?
50 grams of spelt flour
25 grams of oatmeal
Half a teaspoon of baking powder (optional)
1 mashed banana
1 tablespoon of flaxseed (optional, always soaked in 3 tablespoons of water)
A few drops of vanilla extract (optional)
100 ml of almond milk (or another type of plant milk)
Coconut oil (or another type of oil, to bake)
How do you make them?
Mix all the ingredients together in a bowl or shaker bottle until you reach an even consistency. Meanwhile, warm up a pancake pan or normal pan (medium heat) and add some coconut oil.
Pour the batter in the pan, you could make big pancakes, but I like to make 5 to 6 little ones.
Bake them on each side for about 3 minutes.
Et voilá! Top off with your favourite toppings. I love to eat them with some red fruit and chocolate sauce or agave.
